摘要
物理杀菌技术作为一类新型杀菌技术 ,正逐渐在食品工业中得到广泛应用。本文在阐明物理杀菌特点的基础上 ,介绍了几种典型的物理杀菌方法的机理、工艺流程及其在食品工业中的应用。
As a modern technology, physical sterilization has been gradually used extensively in food industry. This article clarifies this method character and introduces several typical physical sterilizations about their mechanisms, technological processes and applications in food industry.
