甜菊糖苷是一种高甜度、低热能的纯天然甜味剂,对糖尿病、高血压病、心脏病、龋齿等有一定的辅助治疗作用,被广泛地应用到食品中。本文介绍了甜菊糖苷的特性、保健功能及其在饮料、果酒、蜜饯、果脯、罐头、糕点、调味品、乳制品和水产品中的应用,并展望了其发展前景。
Stevioside is a high intensity,low energy natural sweetener which plays a certain role of adjuvant therapy to diabetes,hypertension,heart disease and tooth decay,and has been widely applied in the food industry.The characteristics,health function and the application in the beverage,wine,preserved fruits,preserved fruit,canned food,pastries,condiments,dairy products and aquatic products of stevioside were described,and development prospects of stevioside were prospected.
