摘要
β-葡萄糖苷酶可以水解植物中化合物的糖苷键,释放出具有芳香气味的苷元物质,在酿酒、大豆异黄酮水解、制糖和果汁加工中有着广泛的应用。β-葡萄糖苷酶生产工艺、特性以及固定化的深入研究将大大拓展该酶的应用领域,从而更好的满足工业生产的需要。
β-glucosidase has been widely utilized in enology,soybean isoflavone hydrolysis,sugar making,juice process and many other fields,which can releases the aromatic aglycon through hydrolyzing glycosidic bond of the compounds in many kinds of plants.The deep research on production technique,property and immobilization of the β-glucosidase can widen its application domain and satisfy the requirement of industry production.
