摘要
研究了孜然挥发油微胶囊的生产工艺。选用β-环糊精作壁材,采用四因素三水平响应面设计确定最佳微胶囊生产条件。实验确定孜然挥发油微胶囊化的最佳工艺:芯材与壁材比为6∶7、进风温度210℃、可溶性固形物含量30%、均质压力25MPa,在此条件下挥发油的理论包埋率为86.7%。
In this study,production conditions for Cuminum cyminum essential oil microcapsulation are investigated using response surface methodology.β-Cyclodextrin was used as wall material.A Box-Benhnken central composite Design with four independent variables: core material/wall material,inlet temperature,soluble solid content,and homogenization pressure was used to study the response variables(encapsulation percentage).Data analysis showed that optimal parameters of Cuminum cyminum essential oil microcapsulation are as followings: core material/wall material 6∶7,inlet temperature 210 ℃,soluble solid content 30%,and homogenization pressure 25 MPa.At this optimum condition,encapsulation percentage of Cuminum cyminum essential oil microcapsulation was 86.7%.
