摘要
加大课程建设与改革力度,增强学生的职业能力,提高高等职业教育教学质量,是各高职院校教学工作的重中之重。肉制品生产课程是高职院校食品加工技术专业的专业课之一,是一门理论和实践紧密联系,培养学生职业能力的专业课程。本课程总体改革思路是紧扣食品加工技术专业的人才培养目标,尝试进行以"产品导向,任务驱动"为教学模式的课程设计。
To enhance the curriculum construction and reform,to improve students' professional ability,and to promote the quality of higher vocational education are the most important tasks of higher vocational colleges.'Meat processing technology' is one of professional courses in the food processing technology specialty of higher vocational colleges,which is a close link between theory and practice,and aims at cultivating students'professional competence.The overall reform idea is closely related to food processing technology professional personnel training,trying to carry out the 'product-oriented,task-driven' model of curriculum design for teaching.
