李果实氨基酸种类和含量分析 被引量:23

摘要 利用氨基酸自动分析仪测定了福建8个李品种的氨基酸组成和含量。结果表明,李果实中氨基酸含量高,种类丰富,其中田黄李中含量最高,达492.84mg/100g。不同李品种已检测的17种氨基酸中,均以天冬氨酸含量最高;必需氨基酸含量为59.23~100.41mg/100g,占总氨基酸的20.42%;儿童必需氨基酸含量也很高,平均可达14.60mg/100g;味觉氨基酸含量高,其中田黄李的味觉氨基酸在测试的8种李品种中最高。李果实中药效氨基酸的含量也很丰富,以天冬氨酸、谷氨酸和赖氨酸为主,总量以皇后李最高、田黄李次之,分别为366.95和355.49mg/100g。 The contents and compositions of amino acids in eight plums in Fujian were assayed using automatic amino acid analyzer.The results showed that the content of amino acids was high and the contents were rich in plums.The highest content of amino acids was found in Tianhuang plum,which was 492.84 mg/100 g.Aspartic(asp) content was the highest among other detected amino acids.The contents of essential amino acids varied from 59.23 to 100.41 mg/100 g and accounted for 20.42% of the total detectable amino acids.The content of children’s essential amino acids was averaged at 14.60 mg/100 g.The highest content of tasty amino acids was found in Tianhuang plum.In addition,the content of medical amino acids,mainly asp,glutamate and lysine,was also rich in plums,and the highest content of total medical amino acids were detected in Huanghou plum,followed by Tianhuang plum,which were 366.95 mg/100 g and 355.49 mg/100 g,respectively.
