脉冲强光对梨多酚氧化酶钝化实验研究 被引量:10

Optimization and validation of pulsed light processing conditions to inactivate polyphenoloxidase in pear

摘要 进行了脉冲强光对多酚氧化酶的钝化实验研究,选用光照强度、闪照次数、酶液厚度作为影响因素,使用响应面法优化得出最佳工艺参数。实验结果表明,酶液厚度和闪照次数对钝化效果影响最显著。最佳工艺参数为:光照强度为0.89J·cm-2,酶液厚度1.56mm,闪照次数149。在此条件下相对酶活达38.2%。 Pulsed light (PL) for inactivating polyphenoloxidase (PPQ) was studied.The Influence factors were light influence,number of pulsed and the liquid thickness.The results showed that the activity depletion was strongly dependent on the evaluated factors, mainly number of pulsed and the conditions were light intensity 0.89J· cm-2, the liquid thickness 1.56mm, conditions,inactivation values for PPO achieved 38.2%. quid thickness.
