摘要
综述了果蔬脆片的特点、分类和技术发展沿革,低温气流膨化干燥技术的国内外研究进展,低温气流膨化干燥果蔬脆片的特点,并对该研究的前景作了展望。
This paper summarizes the characteristics,classification and technology development evolution of fruit and vegetable chips,reviews on explosion puffing drying for fruits and vegetables chips at low temperature and air current,characteristics of fruits and vegetables chips dried by explosion puffing drying at low temperature and air current,and does the forecast to the further research.
