精米中铁含量差异的研究

摘要 [目的]分析水稻精米中铁含量的差异。[方法]从国内不同地区采集了239份水稻样品,用ICP测定稻米中各种元素含量,研究不同基因型精米的铁含量分布,分析铁含量与其他微量元素含量的关系以及与氨基酸含量的关系,遴选出富铁的水稻品种。[结果]239份稻米样品中铁含量在1.15~43.84 mg/kg,平均值为(13.056±3.613)mg/kg,变异系数为28%。不同基因型水稻精米铁含量频率为正态分布,其含量差异极为显著。精米中铁含量与微量元素Cr、Ni、As的含量相关性不显著,与Cu、Mo、Zn相关性极显著。精米中铁含量与氨基酸呈负相关,且均不显著。[结论]水稻精米铁含量除受遗传因素的控制之外,还受气候、土壤和灌溉水等环境因素的影响。 [Objective] The studu aimed to analyze the difference of iron content in the polished rice.[Method] 239 rice samples were selected from the differn areaes in China and the contents of various elements in the polished rice were determined by using ICP,so as to study the distribution of iron content of the polished rice with diferent genotypes,analyze the relationship of the iron content with other trace elements and the amino acid contents and selecte the rice varieties rich in iron.[Result] The iron conten in the 239 rice samples were 1.15~43.84 mg/kg,with the mean value of(13.056±3.613)mg/kg and the variation coefficient of 28%.The iron content frequency of the polished rice wirh different genotypes was in the normal distribution and their iron content difference was extremely significant.The iron content in the polished rice had no significant correlation with the trace elements Cr,Ni and As contents,but had a extremly significant correlation with Cu,Mo and Zn contents.The iron content in the polished rice showed the negative correlations with the amino acid,but the negative correlations were all non-significant.[Conclusion] The iron content in the polished rice was not only controlled by the genetic factors,but also effected by the climate,soil and irrigation water and other environmental factors.
