2009—2010年南宁市面制食品中铝含量的调查 被引量:3

Survey on aluminum content in flour products in Nanning City from 2009-2010

摘要 目的了解南宁市面制食品中铝含量和分析其超标原因,以便有关部门更好地监管。方法于2009—2010年对南宁市部分面制食品分成6类进行随机抽样,样品按GB/T 5009.182-2003方法进行检测。结果按GB 2762-2005进行评价。结果检测6类面制食品179份,超标100份,超标率为55.9%。2009和2010年超标率分别为69.0%和47.2%,差异有统计学意义(χ2=8.251,P<0.01)。其中油条超标率最高为96.8%,糕点为66.7%,其他面制食品超标率为0~47.4%。结论南宁市部分面制食品中铝含量超标严重,尤其是油条和糕点,滥用含铝疏松剂是超标的主要原因。食品安全监管部门应加强监督监测和宣传培训力度,食品生产加工经营单位及个人要严格控制含铝疏松剂的使用量,确保食品安全。 [Objective]To understand the aluminum content in flour products,analyze the causes of over standard,so as to provide the basis for further supervision.[Methods]The flour products in Nanning City were classified into three types and sampled randomly from 2009-2010.The samples were tested according to GB/T 5009.182-2003,and the results were evaluated according to GB 2762-2005.[Results]179 samples of flour products were tested,and 100 were unqualified with the over standard rate of 55.9%.The over standard rate in 2009 and 2010 was 69.0% and 47.2% respectively,and the difference was significant(χ2=8.251,P0.01).The over standard rate of fried twisted stick was the highest(96.8%),followed by the pastry(66.7%),and the over standard rates of other flour products ranged between 0 to 47.4%.[Conclusion]The aluminum contents of some flour products exceed the standards greatly in Nanning city,especially fried twisted stick and pastry,and the main reason is abuse of aluminized loose agent.The food safety supervision department should strengthen the supervision,monitoring and education training.The food production enterprises and individual business shall strictly control the usage of aluminized loose agent,in order to ensure the food safety.
