摘要
花生是重要的食入性过敏原食物,花生中的过敏原会引起极其罕见的过敏症,严重时甚至会导致人死亡。主要论述花生导致机体过敏的机理、花生中的过敏原物质及其脱敏方法,对降低花生制品致敏性、提高花生制品的安全性有重要意义;同时还为扩大花生制品市场提供有效的途径。
Peanuts are important inhalant allergens.Allergens in peanuts can cause extremely rare hypersensitivity and even death.This paper mainly discussed the mechanism of peanuts that made body allergic,the allergen substances in peanuts and methods of desensitization in order to provide an effective way to develop hypoallergenic peanut products,increased the safety of peanut products,expanded its market penetration.
