摘要
随着高新技术的不断发展以及其在食品行业的广泛应用,高新技术在醋制品生产中的应用也占据重要位置。本文主要介绍了现代高新技术在醋制品生产中的应用,包括生物技术、微胶囊技术、超滤技术、微波技术、红外技术等。在介绍其原理和在食醋酿造工艺中应用的同时,也提出如何更好的利用高新技术,提高我国醋制品行业发展速率,适应当今市场对于醋产业的要求。
Vinegar products are traditional flavor food in China.With continuous development and wide application in the food industry,applications of modern high techniques in the production of vinegar products occupy an important position.The article mainly introduced the application of modern high techniques in vinegar production,including biotechnology,microencapsulation technology,ultrafiltration technology,microwave technology,and infrared technology and so on.It not only presented the principle and application of vinegar products,but also proposed how to make better use of high technology to improve rate of Chinese vinegar industry and meet the demands of the market in vinegar products at present.
