综述了黑木耳的主要营养成分及其保健作用,着重探讨了黑木耳多糖,并展望了黑木耳保健品产业的开发前景。
This paper summarizes major nutrients of Auricularia auricula and its hygienical value,especially for its polysaccharide.The new progress of Auricularia auricula's applications in the field of functional food is reviewed.
