摘要
采用生物法、化学法和膨化挤压相结合的工艺 ,从茭白壳中提取膳食纤维。通过处理后总膳食纤维提高了 50 %左右。可溶性纤维的含量也有所增加。提取的膳食纤维纯度高、复水后柔软、持水性强 ,与美国专利产品比较 ,品质较接近。
A technology which combines biological,chemical methods and extrusion technique was used to produce dietary fiber from the shell of Zizania aqucatica L.It resulted in a product with gross fiber content increase by 50% and higher soluble fiber content.The product was of high purity,soft and strong water sustaining,comparable with a patent product from USA.So the shell of the plant is one of valuable dietary fiber resources.
