摘要
以甘蔗糖蜜为碳源生产黄原胶 ,摇瓶发酵 72 h,其产胶量可达 3 .2 6% ,碳源转化率为 65.2 % ,成品粘度1 760 m Pa· s,剪切值 6.53 .实验结果表明 ,甘蔗糖蜜完全可以代替蔗糖、玉米淀粉或葡萄糖为碳源发酵生产黄原胶 ,从而为完善我国黄原胶生产技术提供了一条新的途径 .
This paper reported the fermentation produced xanthan gum experiments using cane molasses as carbon source by Xanthomonas campestris NK 01. Under suitable condition, fermentation 72h in shaking flask, Yiled of xanthan gum was 32.8 g/L, trasformation rate of carbon source was 65.2%, viscosities of finished products were 1760 mPa·s, shearing value was 6.53. Experiment results indicated that cane molasses could be used to replase sucrose, corn starch and glucose as carbon source in fermentation production of xanthan gum.
