摘要
虾青素是类胡萝卜素的含氧衍生物,由于其独特的分子结构而具有多种特殊的功能特性,在食品、医药、化妆品等行业具有广阔的前景。本研究主要就虾青素的结构特点、理化性质进行了简要介绍,对其具有的抗氧化、抗癌、增强免疫、抗高血压、预防心血管疾病等特殊功能性质进行了综述,总结了虾青素在功能性食品中的应用现状和发展前景。
Astaxanthin,a kind of keto-carotenoids with a variety of functional characteristics due to its unique molecular structure,has broad prospects in food,pharmaceuticals and cosmetics industries.Briefly introduce the structural features,physical and chemical properties of astaxanthin.Also,a series of its unique functions,including anti-oxidation,anti-cancer,improving immune response,anti-hypertension and the prevention of cardiovascular disease were reviewed in detail.And finally summarize the application status and the development prospects of astaxanthin in functional food.
