深圳市福田区日常食物的铝含量及居民暴露量评估 被引量:7

Evaluation of aluminium level and exposure in daily food in Futian district of Shenzhen

摘要 目的:了解深圳市福田区食品中各类食物中铝含量,并评估居民铝的暴露量情况,为今后开展监管工作提供依据。方法:2010年-2011年从辖区采集市售粮食、蔬菜等13类食品共311份,按照国家标准方法检测食品中铝的含量。根据2002年居民膳食营养调查中食物的摄入量,结合食物中铝含量的结果,进行食品中铝的暴露量评估。结果:部分面制食品中的铝含量超标较严重,居民每日通过日常食物摄入的铝量为13.4mg,比WHO/FAO的ADI值(60mg/d)低。结论:目前居民食品中铝的摄入量是安全的,但需要加强面制食品的监督管理,以保护消费者身体健康。 Objective:To know the aluminum pollution in daily foods in Futian district of Shenzhen, to evaluate the safety of aluminum exposure among residents, and to provide the basis for hygiene supervision. Methods: A total of 311 food samples were collected from food stalls in Fujian district from 2010 to 2011. Aluminum content was detected according to GB/T 23374 - 2009. The intake safety of dietary aluminum of the residents was assessed in accordance with intake investigation in 2002 and the actual content of aluminum in foods. Results: The content of alu- minum in some flour foods had exceeded the standard. The general intake content of aluminum in foods was 13.4 mg per man per day, which was lower than ADI (60 mg/d) recommended by WHO/FAO. Conclusion: The intake of aluminum among residents was safe at present, the inspection for aluminum contamination in flour foods should be strengthened in order to protect the health of consumers.
