摘要
流行病学的研究表明,本市女性肿瘤的诱发因素除吸烟外,与厨房小环境的空气污染有密切关系,其主要污染源来自燃料的不完全燃烧及烹调时的食用油油烟雾。有关资料提示,常用菜油烹调者肺癌相对危险度高于常用豆油者。Ames微生物试验已经证实了食用菜油。
Mutagenicity of rapeseed oil condensate,hydrogenated or not,was studied by observ-ing sister chromatid exchange rate (SCE) in Chinese hamster V79 cell line. No in-crease of SCE can be seen in the absence of S9 activation system. Highly hydrogenatedrapeseed oil condensate (without linolenic acid and linoleic acid) gave no influence onSCE, while the lowly hydrogenated condensate (with 1% linolenic acid and 6.8% lino-leic acid) as well as the unhydrogenated refined /unrefined rapeseed oil condensateenhanced the SCE. The result demonstrated that the ability of rapeseed oil condensateto induce SCE in V79 cell required S9 activation sysiem and was related with theextent of hydrogenation. It is indicated that the mutagenic substances derived fromdecomposed unsaturated fatty acid and the process can be blocked by hydrogenation.
