摘要
【目的】了解新疆不同产区无核白葡萄果实糖酸含量的差异。【方法】对鄯善、哈密、吐鲁番和托克逊产区的无核白葡萄抽样,测定分析147份样品果实的可溶性固形物、还原糖、总酸含量及固酸比,并与现有国内标准的相关指标进行对比。【结果】鄯善产区无核白葡萄的可溶性固形物、还原糖含量及固酸比较高,总酸含量低;哈密产区可溶性固形物和还原糖含量高,固酸比较低,总酸含量高于其它产区;吐鲁番与托克逊可溶性固形物、还原糖、总酸含量以及固酸比无显著差异。根据无核白葡萄国家标准(GB/T 19970-2005),147份无核白葡萄样品可溶性固形物含量分布为特级占89.8%,一级占8.2%,二级占2.0%,总酸含量主要分布在一、二级;按无核白葡萄农业行业标准(NY/T704-2003),35.4%的样品可溶性固形物含量达到一等品级次,23.1%的样品达到二等品级次,31.3%的样品分布为优等品级次;总酸含量达到优等品的分布量为36.1%,一等品分布量为29.9%,二等品的分布量为19.7%;固酸比达到优等品的分布量为32.0%,一等品的分布量为38.1%,27.2%分布在二等品级次中。【结论】鄯善、哈密、吐鲁番和托克逊产区无核白葡萄果实糖酸含量存在较大差异性。国家标准中对无核白葡萄可溶性固形物的分级标准偏低,农业行业标准的分级较合理,但固酸比的分级较为粗放,两个标准对总酸含量分级都较粗放。
[ Objective ] In order to understand the differences of sugar and acid contents of Thompson Seedless grapes in the different production regions of Xinjiang. [ Method] 147 samples of Thompson Seedless grapes from Shanshan, Hami, Turpan and Toksun were sampled, and the contents of total soluble solids (TSS), reducing sugar, total acid, the ratio of TSS to acid were determined and statistically analyzed. [ Result] The contents of TSS, reducing sugar and the ratio of TSS to acid of Shanshan County were relatively high, the content of the total acid was low ; TSS and reducing sugar content of Hami were high, the ratio of TSS to acid was the lowest, the total acid content was higher than those in other producing areas. There were no differences of contents of TSS, reducing sugar, total acid and the ratio of TSS to acid between Turpan and Toksun. According to the content of TSS, the grape samples of superior, the first class and the second class accounted for 89.8%, 8.2% , 1.2% respectively following GB/T19970 - 2005 ; The total acid content was mainly distributed in the first class and the second class; Based on NY/T-/04 - 2003, the content of TSS of 35.4% of seedless grape reached to the first grade, 23.1% of the sample arrived to the second grade, and 31.3% of grape samples to the excellent grade ; Total acid content of the excellent grade of distribution was 36.1%, the distribution of the first grade was 29.9%, the distribution of the second grade was 19.7% ; The distribution of the ratio of TSS to acid that achieved excellent grade was 32.0%, the distribution of the first grade was 38.1%, and 27.2% of the sample distribution was in the second grade. [ Conclusion] There were some differences in sugar and acid contents of Thompson Seedless grapes in the different production regions: Shanshan, Hami, Turpan and Toksun in Xinjiang. The National Standard of the Thompson Seedless grape total soluble solids grading standard was low, the classification of the agricultural industry criteria was more reasonable, but the classification of the ratio of TSS to acid was more extensive, both the classification of the total acid content were more extensive.
