摘要 【目的】采用响应面法研究壳寡糖对杏果实减压渗透处理的最优条件。【方法】以新疆塞买提杏为实验材料,采用壳寡糖减压渗透的方式处理杏果实,浓度为0.5%、0.75%、0.25%,减压压强为0.03、0.05和0.07 MPa,减压时间为1、3和5 min。以杏果实硬度和发病率为响应值,研究壳寡糖对杏果实减压处理的最佳条件。【结果】在硬度和发病率的二次多项模型中,浓度和压强起着关键性的作用,在一次项和二次项中都表现差异显著。【结论】壳寡糖对杏果实减压渗透处理的最佳条件为浓度0.50%,压强0.05 MPa。 [ Objective] The purpose of this study was to evaluate the effect of oligochitosan by vacuum infiltration of postharvest apricot fruits by response surface method with different concentrations, pressure and treatment times. [ Method ] The Saimaiti apricot fruits (Prunusar meniaca L) were treated by vacuum infiltration of 0. 25% , 0.50% or 0.75 % oligochitosan solution (molecular weight: 5,000). The pressure of treatment were 0.03, 0.05, 0.07 MPa; The time of vacuum infiltration was lmin, 3rain, 5min. The disease and firmness were exponent to determine the best combined condition. [ Result ] The results indicated that oligochitosan solution and pressure were the key factors affecting disease and firmness, and had significant effect. [ Conclusion ] The optimum vacuum infiltration was solution 0.5 %, 0.05 MPa and 3 min.
