摘要 为全面了解野地瓜(Ficus tikoua Bur.)果实的安全性及营养价值,为其利用和开发提供依据,分析了野地瓜果实的矿物质、维生素、蛋白质、氨基酸和重金属等含量。结果表明,野地瓜矿物质除Na和Zn外,其余各元素的含量、维生素和膳食纤维含量均高于参比水果(常见新鲜水果)的平均值,其蛋白质含量为1.63 g/(100g)(鲜重),氨基酸种类齐全(17种),必需氨基酸占总氨基酸的62.49%;野地瓜果实中的Hg、Pb、As含量均未超过果品的卫生限量标准,属于可食安全范围。 Several major nutrients contents, such as mineral elements, proteins, amino acids and vitamins, from fresh fruit of F. tikoua were analyzed to comprehensively explore the nutritive value and security and provide a reference for its utilization and development. The results showed that the contents of niacin, dietary fiber and the most mineral elements in F. tikoua were higher than other reference fruit except for sodium (Na) and zinc(Zn). The protein content in F. t/koua reached 1.63 g/100 g FW (flesh weight). The 17 kinds of amino acid in F. tikoua were complete, accounting for 62.49 % in total amino acid. The content of mercury ( Hg), lead (Pb) and arsenic (As) in F. tikoua did not exceed the standards of limited gauge of the vegetable. Therefore, it suggested that F. tikoua could serve as a safe wild fruit.
