摘要
利用氨基酸自动分析仪对新疆伊犁马肉进行分析,测定了伊犁马肉中氨基酸的种类和含量,发现伊犁马肉中氨基酸含量丰富,氨基酸总含量为19.91%,所含的人体必需氨基酸占总氨基酸含量的38.5%,基本符合理想蛋白质中人体必需氨基酸标准,而且药效氨基酸含量较高,占总氨基酸含量的68.4%,其中还含有较高含量的谷氨酸、天冬氨酸、亮氨酸和赖氨酸。结果表明伊犁马肉具有很高的营养价值和一定的药用价值。
To determine the type and the content of amino acids in Ili horse meat of Xinjiang Uygur autonomous region by high speed amino acid analyzer. We found that there were many kinds of amino acids in Ili horse meat, the total contents of amino were 19.91%, and the contents of essential amino acids in the total amino acids were 38.5%, in line with the standard of essential amino acids in ideal protein, meanwhile, the contents of medicinal amino acids were high, the contents were 68.4% in the total amino acids, which also contains a high content of glutamic acid, aspartic acid, leucine and lysine. The result shows that Ili horse meat has high nutritional value and a certain medical value.
