安康市2010年食源性致病菌污染监测与分析

摘要 目的了解安康市市售食品中食源性致病菌的污染状况和高危食品种类。方法依据《食品卫生微生物检验》标准和国家食源性疾病监测网要求对市售食品进行采样检测。对安康市几个主要的集贸市场和超市采集12类食品进行7种食源性致病菌检测。结果 2010年共对174份样品进行食源性致病菌污染检测,检出致病菌29株,总检出率为16.67%(29/174),其中单核细胞增生李斯特菌检出率11.11%(12/108),金黄色葡萄球菌检出率10.42%(10/96),沙门菌检出2.87%(5/174),副溶血弧菌检出率5.56%(2/36)。12类食品中熟肉制品以及速冻熟制米面制品污染率较高,分别达到了28.57%、16.67%。结论各类食品中均检出食源性致病菌,以单核细胞增生李斯特菌和金黄色葡萄球菌为主,表明这两种菌是本市目前最主要的食源性致病菌。应加强对各类食品食源性致病菌监测,并采取相应的预防和控制措施,防止食源性疾病的暴发。 Objective To understand the contamination of food-borne pathogens in food of Ankang city,and identify the food at high risk for bacterial contamination.Methods According to the Food Sanitation Microbial Examination Standard and national monitoring network on food-borne diseases,seven kinds of food pathogens in 12 types of food collected from several major markets in Ankang.Results 29 strains of food-borne pathogens were detected from 174 samples,detective rate was 16.67%(29/174),including L.monocytogenes 11.11%(12/108),Staphylococcus aureus 10.42%(10/96),salmonella 2.87%(5/174),V.parahaemolyticus 5.56%(2/36).Polluted rates of the cooked meat and frozen rice products were high,up to 28.57% and 16.67%.Conclusion Pathogens are detected in various food and main food-borne pathogens are L.monocytogenes and Staphylococcus aureus in the city.Therefore,pathogens in various types of food should be strengthened detection and taken appropriate preventive and control measures to prevent food-borne diseases.
