Analysis of Egg Quality among Different Kinds of Chickens

摘要 本研究对4种鸡蛋的表观品质和蛋品质进行了测定。结果显示,4种鸡蛋的表观品质在蛋重、蛋壳比重及蛋白重3项指标中差异显著,其中黑鸡的蛋重显著高于大骨鸡和安卡鸡(P<0.01),蛋白重显著高于大骨鸡(P<0.01)和安卡鸡(P<0.05);大骨鸡的蛋壳比重显著高于黑鸡(P<0.01)和芦花鸡(P<0.05)。4种鸡蛋的蛋品质在蛋壳厚度及蛋黄色泽上差异不显著,大骨鸡的蛋形指数显著高于芦花鸡和安卡鸡(P<0.05);黑鸡的蛋壳色泽最深,显著高于芦花鸡(P<0.05);芦花鸡的蛋壳强度显著低于大骨鸡和安卡鸡(P<0.01),蛋白高度(P<0.01)和哈氏单位(P<0.05)均显著高于大骨鸡。本研究结果为地方肉蛋兼用型鸡种芦花鸡的蛋品质选育改良提供了参考。 Apparent qualities and internal qualities of four kinds of eggs were detected in this study. The results showed that the apparent qualities of four kinds of eggs had significant difference in egg weight, eggshell proportion and egg albumen proportion. In which, the egg weight of Black chicken was significantly higher than that of Dagu chicken and Anak chicken (P〈0.01), and the protein weight of Black chicken was significantly higher than that of Dagu chicken (P〈0.01) and Anak chicken (P〈0.05). Eggshell proportion of Dagu chicken was significantly higher than that of Black chicken and Luhua chicken. To internal qualities indexes, there was no difference on eggshell thickness and yolk color, but egg shape index of Dagu chicken was significant higher than that of Luhua chicken and Anka chicken (P〈0.05). Egg shell color of Black chick- en was the darkest, and significantly higher than Luhua chicken (P〈0.05). Egg shell strength of Luhua chick- en was significantly lower than that of Dagu chicken and Anka chicken (P〈0.01), albumen height (P〈0.01) and Haugh Unit (P〈0.05) were significantly higher than that of Dagu chicken. These results had provided a refer- ence to breeding and improvement of Luhua chicken egg quality.
