明胶是胶原蛋白部分水解的产物,是从动物的皮、骨等结蹄组织中提取而成,在食品、医药、感光和工业等领域有着广泛的用途。文章就明胶的来源和组成、分类和应用以及潜在的危害性等方面进行综述,使人们能对明胶有个基本的认识。
Gelatin is a partially hydrolyzed product of the collagen.Most gelatins are extracted from animal tissues,such as skins and bones,etc.Gelatin has wide applications in food,pharmaceutical,photographic,and industrial areas.This paper focuses on the source and composition of gelatin,classification and application,and potential dangers.
