摘要 食品安全的核心是质量安全,关键是落实食品企业的社会责任。回收和利用过期食品,超标添加食品添加剂、滥用非法添加物,以次充好、造假售假,都是食品企业违背伦理的突出表现。因此,食品企业的伦理建设刻不容缓。引入独立监督机构,加紧对食品原料生产全过程的监控、加强企业的内部监督,推进食品企业诚信建设,重视食品行业从业人员的职业道德教育,建立健全食品召回制度,可作为加强食品企业伦理建设的重要思路。 The main point of food safety is quality and the key is to clarify food companies~ social responsibility. Recycling or reusing the overdue food, overusing food additive, abusing illegal additive, adul- terating the quality, producing or selling fake productions are the several most significant appearances of unethical food companies. Therefore, it is very urgent to build food companies' ethics. Use in- dependent supervisal institutions, supervisory controlling productive process of food materials, strengthen companies~ inner supervision, improve ethics building of food companies, value food producers' ethics education, establish and improve food recall system, these can be an important and useful way to strengthen building food compa- nies' ethics.
