摘要
根据测得的黄酮类化合物对油脂的过氧化值 ,研究了黄酮类化合物抗氧化性与其结构的关系 .结论是B - 4′-OH为强活性基 ,B - 2′、3′、5′、6′-OH和A - 7-OH为增效基 ,用共振理论与诱导效应讨论了黄酮类化合物有无C - 2 ,3双键 。
The relationship between structure and antioxygenic activity of flavonoid have been studied by determined peroxide values of flavonoid for grease.The conclusions are that B-4′-OH is conspicuous activity radical,and B-3′、5′-OH and A-7-OH pertain to slight activity radical.The cause of antioxygenic activity remaining stationary nearly has been discussed by means of the resonance theory and the inductive effect.
