池塘精养中华绒螯蟹营养成分分析与评价 被引量:13

摘要 对池塘精养中华绒螯蟹的生物学指数,可食部分的概略养分、矿物元素、氨基酸以及脂肪酸进行检测与分析。结果表明:中华绒螯蟹的肥满度、可食部分及非可食部分占体重的百分比分别为0.58、34%和56.49%;中华绒螯蟹可食部分水分、粗蛋白、粗脂肪、粗灰分、无氮浸出物、钙、磷的平均含量依次为62.35%,19.16%,10.82%,1.69%,6.00%,0.23%,0.29%;能值为9.86kJ/g;镁、铁、锌、铜、锰的平均含量分别为356.53,72.11,54.02,10.26,5.77μg/g;氨基酸总量、鲜味氨基酸量以及人体必需氨基酸量分别为16.15%,6.04%,6.76%;脂肪酸总量为5 588.39μg/g,其中含单不饱和脂肪酸3 603.57μg/g。上述指标中,除水分、粗灰分、钙、磷、铁、铜以雄蟹中含量较高以外,其余指标均以雌蟹中含量较高,表明雌蟹的整体营养价值以及风味比雄蟹好。 Biological indexes, water, crude protein, ether extract, ni- trogen-free extract, ash,minerals amino acids and fatty acids in the edible parts of Eriocheir sinensis H. Milne-Edwards were deter- mined to analyze the quality of Eriocheir sinensis H. Milne-Edwards under pond intensive culture in Oct,2005. The results indicated that saturated degree, proportion of edible part and non-edible parts were 0.58, 34% and 56.49%, respectively. Proportion of water, crude protein, ether extract, ash, nitrogen free extract, calcium and phos- phorus in the edible parts were 62. 35%,19.16%,10.82%, 1.69%, 6.00%, 0. 23 % and 0. 29%, respectively. Magnesium, iron, zinc, copper and manganese in the edible part were 356. 53, 72. 11, 54.02, 10.26 and 5. 77 μg/g. Total amino acid, flavor amino acid and essential amino acid in the edible part were 16.15 %,0, 6.04% and 6.76%, and total fatty acid and mono-unsaturated fatty acid in that part were 5 588.39 and 3 603. 57 μg/g. Among the above indexes, except the water, crude ash, calcium, phosphorus, iron, and copper, all the other indexes in the female Eriocheir sinensis H. Milne-Edwards were higher than that in the male, which shows that the total nutrient value and flavor of edible parts in the female were better than that in the male.
