摘要
研究旨在从豆腐乳中筛选1株具有广谱抑菌活性的乳酸菌。采用钙溶圈方法,挑取钙溶圈直径与菌落直径比值大的菌株,并通过产酸试验、形态学及生理生化特性判断是否为乳酸菌属;发酵上清液采用平板透明圈方法研究抑菌活性。从豆腐乳中筛选得到的20株乳酸菌,其中L1、L2、L6、L8、L9、L11、L12、L16、L17、L19这10株乳酸菌为革兰阳性菌,经形态学及生理生化鉴定后归为乳杆菌属;发酵上清液抑菌试验表明L12对试验指示菌均具有较高的抑菌活性。所筛选得到的乳酸菌L12具有广谱的抑菌活性。
The intention of this study was to screen broad-spectrum bacteriostatically active lactobacterial strains from fermented tofu adopting calcium dissolving ring method, and picked up those strains with big ratio of the ring diameter against their colony diameter and passed through their acid production experiments. Then judged whether they belonged to lactobacterial gena through morphology, physiology and biochemistry. Their baeteriostatie activities were studied adopting plate transparent circles of their fermentation supernatant. 20 bacterium strains were isolated from fermented tofu, ten among them L1, L2, L6, L8, Lg, L11, L12, L16, L17, L19 belonged to Gram positive laetobacteria after identified their morphologie, physiologic, and biochemical characters indicated that 10 laetobacterial strains belonged to Lactobacterium Heim. The bacteriostatie experiment of the supernatant indicated that strain L12 had fairly high bacteriostatie activity against tested indicator strains. The screened strain L12 had broad spectrum bacteriostatic activity.
