摘要
目的了解公共餐饮具卫生现状,以便加强公共餐饮具消毒管理。方法通过现场抽样检测的方法,对呼和浩特市2009-2011年公共餐饮具消毒卫生质量进行了监测。结果连续3年从呼和浩特市1 076家餐饮单位共抽检餐饮具10 732份,平均总合格率为83.34%。大中型餐饮单位餐饮具卫生质量合格率高于小型餐饮单位。结论呼和浩特市公共餐饮单位餐饮具卫生消毒质量合格率普遍偏低,以小型餐饮单位较为突出,需要加强城市公共餐饮具卫生管理。
Objective To know the sanitation quality of public tableware in Hohhot, in order to strength management of public tableware. Methods On - site sampling detection method was used to monitor the public tableware disinfection quality of Hohhot in 2009 -2011. Results 10 732 samples of 1 076 restaurants were checked. The average passing rate was 83.34%. Tableware passing rate of large and medium sized restaurants were higher than that of the small restaurants. Conclusion The quality rate of tableware sanitary disinfection in Hohhot restaurants is low, especially in small restau- rants. It is very urgent to strengthen the health management of public catering units.
