摘要
谷氨酰胺转氨酶(TGase)是一种可催化酰基转移反应的酶。该文就此酶来源、作用机理及其在一些主要谷物制品加工(非面筋质、面筋质制品及其延伸化产品等领域)中应用新进展作一综述。
The enzyme transglutaminase (EC 2.3.2.13) catalyzes an acyl transfer reaction between the 3,-carboxyamide group of peptide-bound glutamine residues as acyl donors and primary amines as receptors. The resources of this ezyme, its acting mechanism and its applications in cereal products (non-glutenous, glutenous, and their derivated products ) were summarized in this article.
