浙江省居民常用食用植物油中4种生育酚异构体的含量分析 被引量:10

ANALYSIS OF FOUR TOCOPHEROL ISOMERS IN COMMONLY USED EDIBLE VEGETABLE OILS IN ZHEJIANG PROVINCE

摘要 目的测定分析浙江省居民常用食用植物油中4种生育酚异构体的含量,并对居民从不同品种食用油中维生素E(VE)的膳食摄入量进行估算。方法采用高效液相正相色谱法,SunFire Silica色谱柱(4.6 mm×250mm,5 m),流动相:正己烷-叔丁基甲醚(90:10,v/v),荧光检测器检测波长:激发波长294 nm,发射波长328 nm;检测了浙江省市售120份10个品种的食用植物油中四种生育酚异构体含量,利用《中国居民营养素推荐摄入量(2000年版)》中推荐的脂肪摄入量和浙江省居民膳食营养与健康状况研究报告估算居民从膳食食用油中的维生素E日摄入量。结果 4种生育酚异构体的测定能够实现基线分离,食用油中都存在4种结构的生育酚异构体,但异构体种类分布和含量相差悬殊,生育酚总量以大豆油中最高,达949mg/kg,但有效生育酚总量(α-TE)以葵花籽油中最高,为362mg/kg,大豆油等7种植物油中α-TE相近,在150~190 mg/kg之间;以米糠油和橄榄油中稍低,在80~120 mg/kg之间。按浙江省居民日摄入30g脂肪的量估算,每天可从膳食油中摄入VE在2.4~10.9mg,可占VE推荐摄入量的17%~78%。结论植物油中含有丰富的维生素E,植物油是居民摄取维生素E的主要来源之一,食用不同品种的植物油,VE的摄入量有明显差异。 Objective To determine the content of four tocopherol isomers in commonly used edible vegetable oils in Zhejiang province, and estimate the vitamin E dietary intakes from different edible oils in residents. Method High performance liquid normal phase chromatography was used. The mobile phase was hexane and methyl-t- butyl-ether (90:10, v/v). Tocopherol isomers were separated by the SunFire Silica column (4.6 mmx250 ram,5 pro) and detected in fluorescence detector with excitation wavelength of 294 nm and emission wavelength of 328 nm. The contents of four tocopherol isomers were detected in l0 varieties of edible vegetable oils in 120 replicates commercially available in Zhejiang Province. We used recommended fat intake from Chinese Dietary Reference Intakes (DRI, 2000 version) and data from the health status report in Zhejiang Province for reference and estimated the residents' daily intake of vitamin E from dietary edible oils. Results Baseline separation was achieved in determination of chemical structures of four tocopherol isomers. Then four isomers of tocopherols were identified in all edible vegetable oils while the contents were significantly different. The highest total tocopherols content was 949 mg/kg in soybean oil. The highest effective total tocopherol (alpha-TE) was 362 mg/kg in the sunflower oil. Soybean oil and other 6 vegetable oils had similar ct-TE content between 150-190 mg/kg, slightly lower in rice bran oil and olive oil between 80 to 120 mg/kg. The vitamin E intake in Zhejiang Province was estimated to be 2.4 to 10.9 mg daily from dietary oils, 17%-78% of DRI of vitamin E. Conclusions Vitamin E is abundant in vegetable oils. The vitamin E intake was significantly different when different vegetable oils were comsumed.
