野生鳖与养殖鳖肌肉营养、保健价值的比较研究 被引量:11

摘要 分析了中华鳖 (Trionyxsinensis)肌肉中蛋白质及氨基酸、脂肪及脂肪酸等营养成分的含量 ,并与野生鳖肌肉营养成分作对照 ,结果表明 :养殖鳖肌肉中蛋白质及赖氨酸、谷氨酸和丙氨酸的含量明显降低 ,而缬氨酸、甘氨酸和丝氨酸的含量显著提高 ;脂肪及二十碳五烯酸和二十二碳六烯酸的含量显著增加 ,但亚麻酸和花生四烯酸的含量明显降低 ;胆固醇的含量显著增高。此外发现 ,缬氨酸为鳖肉食用营养的第一限制性氨基酸。在此基础上 ,作者评价了野生鳖和养殖鳖肌肉的营养、保健价值 ,探讨了两者在这些方面的差异性。 Contents of nutrients in muscle of the wild and farmed Chinese soft shelled turtles (\%Trionyx sinensis\%), including protein, amino acids, fats, fatty acids were determined. Compared with the wild turtle, the results illustrated that (1)the farmed turtle had significant decrease in the protein content and percentage of lysine, glutamic acid and alanine, but increase percentage of valine, glycine and serine; (2)it obviously improved the fat content and its eicosapentaenoil acid and docosaheraenoic acid percentage, but had reduction in linolenic acid and eicosadonoic acid percentage; (3)it apparently had increase the cholesterol content In addition, it was found that valine was the first limited amino acid of muscular nutrition for food in turtles Based on the data above, the nutritive value and health-keeping value of muscle were evaluated in wild and farmed turtles and differences between both turtles were approached in this paper
