摘要
以黑龙江小麦麸皮为原料,对膳食纤维进行了提取和改性,着重研究了提取和改性过程中膳食纤维显微结构的变化,进而探讨改性后可溶性增加的原因.
This paper studied on the extraction and modification process of dietary fiber from wheat bran,and focused on the microstructure change during the process of extraction and modification.Meanwhile,the reason caused the solubility of dietary fiber increase after modification was found out.
