摘要 对花生肽的功能特性、制备工艺以及主要用途进行了综述。采用碱性蛋白酶直接水解花生脱脂粕制备花生蛋白酶解物,对蛋白酶的选择、酶解条件的优化以及花生蛋白酶解物的品质等进行了讨论。将花生蛋白酶解物进一步分离纯化可获得具有特定功能性的花生肽制品。鉴于我国丰富的花生资源和花生肽制品的广泛用途,其开发前景十分广阔。 The functional characteristics, preparation process and main applications of peanut peptide were reviewed. The peanut protein hydrolysate was prepared after the direct hydrolysis of defatted peanut meal with alkali protease. The screening of protease, optimization of enzymatic hydrolysis conditions, and quality of peanut protein hydrolysate were discussed. Peanut protein hydrolysate could be used to prepare peanut peptide products with specific functional characteristics by further separation and purification. It was suggested that peanut peptide had good prospect for further development due to its diverse applications and the abundant peanut resource in China.
