摘要
食品色素在食品工业的发展中具有举足轻重的地位,和人们的日常生活密切相关,随着食品安全暴露出越来越多的问题,人们逐渐将目光转移到食用色素上来,用食用色素代替化学色素已经成为研究的热点。本研究主要介绍天然食用色素种类、提取分离方法及发展趋势,旨在为天然植物色素研究与应用提供参考。
Food pigment plays a decisive role in the development of food industry and has a closed relationship with people' s daily lives. Now more and more problems with food safety have been exposed, natural food pigment has become a hot research topic both in edible and medicinal irreplaceable role. It is expected to gradually replace the chemical pigment ,widely used in the food in- dustry. This paper describes the types of natural food pigment, extraction methods, and development trends, aiming to provide a reference for the research and application of natural plant pigments.
