摘要
蛋白质含量的高低是衡量稻米营养价值的主要指标之一,因此提高蛋白质含量是稻米营养品质育种的重要目标。本文阐述了水稻蛋白质种类、氨基酸组成及其营养价值,并概括了水稻不同基因型和不同部位或组织问蛋白质含量的差异、蛋白质含量的遗传及分子机理以及种质创新的研究现状,可为水稻蛋白质含量的深入研究和高蛋白种质创新提供参考。
The protein content is one of the main indices to determine the nutrition value of rice. Improving protein content is an important target for nutrition quality breeding in rice. This paper de-scribed the protein type, amino - acid constitute and its nutrition value in rice. Meanwhile, it summarized the differences in protein content, the genetic and molecular mechanism and germplasm innovation re-search according to different genotypes and tissue parts in rice. It can provide a reference for the innova-tion of high - protein germplasm.
