红蓝草紫色素稳定性的研究 被引量:4

摘要 采用乙醇萃取法从红蓝草(Peristrophe roxburghiana)中提取紫色素,研究了色素的稳定性。结果表明,红蓝草紫色素具有较高的耐光性和耐热性;其在pH 5~13时比较稳定,在强酸强碱条件下不稳定;耐氧化性较差,还原剂对紫色素有保护作用;食品添加剂蔗糖和山梨酸钾对紫色素稳定性的影响较小,而柠檬酸和维生素C会与紫色素发生作用或造成紫色素的降解;Na+、Zn2+、K+、Mg2+和Ca2+5种金属离子对色素稳定性及色泽无太大影响,而Cu2+、Al3+和Fe3+3种金属离子会导致紫色素变色和(或)吸光度下降。 Purple pigment was extracted by ethanol extraction method from Peristrophe roxburghiana and used to study its stability.The results showed that the purple pigment of Peristrophe roxburghian had high light and heat resistance.It was stable when pH 5~13;unstable under strong acid and alkali conditions.Oxidant might cause decolorization of purple pigment;while reductant had protective effect of purple pigment.Food additive sucrose and potassium sorbate acid had little impact on the stability of purple pigment;while citric acid and vitamin C could react with purple pigment or cause its degradation.The effect of Na+,Zn2+,K+,Mg2+ and Ca2+ on the pigment stability and color was insignificant;however,Cu2+,Al3+ and Fe3+ could change the color of purple pigment and decrease its A580 nm.
