摘要 着重介绍大麦葡聚糖研究现状。β-葡聚糖是大麦籽粒和糊粉层细胞壁的主要成份 ,可参于人体内血清中的葡萄糖水平调节 ,降低胆固醇和低密度脂蛋白的含量 ,以及在保键食品上的应用潜力。 This paper stated mainly on the current studies of barley glucan and its applicable abilities on heaithy food Also some advice was given in the paper.
