摘要
以大麦、薏米、大豆、药物A为原料,经烘焙、粉碎、恒温浸提研制出具有咖啡风味的产品。结果表明:浸提的最佳条件为40倍加水量,在60℃下恒温浸提24h。产品最佳配方为薏米粉:大麦粉:大豆粉:药物A粉=30:40:80:2。本品成本低,口感与真咖啡相近且不含咖啡因。
The product had been studied in this paper that it had coffee flavor using barley, Job's tears, soy beaen and medicine A as raw material by curing,grinding and extracting. The results showed that the best extracting condition was 40: 1 ratio of water and material at 60℃ for 24 hours. The optimum formula was Job's tears: barley: soy bean: medicine A= 30: 40:80:2. It had low cost and similar taste of real coffee.
