摘要
采用质量分数为1.0%的明胶和1.78%的海藻酸钠作为固定化乳糖酶载体,比较了固定化乳糖酶随贮藏温度及适宜溶解pH值条件下的活力变化;同时,以牛乳水解率为指标,比较固定化乳糖酶水解乳中乳糖的效果表明,在-18℃及4℃下贮藏一个月,pH为4时,牛乳中的乳糖水解率仍然维持在75%以上。
This studydealt with the activity oflactaseimmobilized with 1.0% gelafinand 1.78% sodium alginate and then stored at different temperatures for one month.The optimal dissolved pH related to the release of the immobilized lactase was also discussed. Meanwhile, the immobilized lactase was applied to hydrolyzethe lactose ofinilk to evaluate the activity of the immobilized lactase stored at different temperatures. It was seen that the immobilized lactase stored at -18 ℃ or 4 ℃ kept the highest activity when the optimal pH was 4 during one-month storage. In this case, morethan 75% lactose from milk was hydrolyzed.
