摘要
对乳链球菌肽 (Nisin)高产菌株 970 6的发酵条件进行了研究 ,在M1 7培养基中 ,效价远远低于CM1,正交实验法得出最适碳源、氮源、生长因子分别为蔗糖、鱼蛋白胨、酵母粉 ,并用正交实验优化了发酵培养基各组成的浓度。Nisin的产生显示了初级代谢动力学特征 ,发酵的最适温度是 35℃ ,培养基最适初始 pH为 7.0 - 7.5 ,最适接种量 5 %~ 6 % ,振荡培养的效价稍高于静止培养。
The fermentation conditions of lactococcus Lactis subsp.Lactis 9706 high yielding nisin were studied in batch culture.CM 1 was more suitable for producing nisin than M17.The optimum carbon source,nitrogen source and growth factor were sucrose,peptone and yeast powder respectively.The production of nisin showed primary metabolic kinetics.The optimum temperature and pH was 35℃ and 7.0-7.5 respectively.The optimum inoculation amount was 5%-6%.In addition,the shaking culture was more proper for nisin production than still culture.
