摘要
研发以玉米醇溶蛋白为骨架的新型材料,玉米醇溶蛋白结构的确定就显得非常必要。分析玉米醇溶蛋白中的主要蛋白α-zein的结构,发现其来源不同,种类不同的α-zein因为氨基酸序列上个别氨基酸的替代,缺失,互换导致一级结构不同,但它们的二级结构相似,类胡萝卜素等嵌在结构中心。分析α-zein结构有利于指导玉米醇溶蛋白的改性研究,增加玉米醇溶蛋白的应用范围。
The primary and secondary structures o( a-zeins which were the most abundant class of zein proteins were reviewed. The different sources and varieties alpha zeins had individual amino acid alternative, missing and interchan- ging in the amino acids sequence leaded to unlike primary structure, but secondary structure ofa-zeins was similarly. The structure ofa-zeins has been reviewed and which will be helpful to guide the research on modification of zein, so as to in- crease utility vnh,o ,~f ~;~
