从化学成份上来说整米与碎米没有什么区别,但是整米与碎米的经济价值及食用品质却有大的区别。在实践生产经验表明,大米加工过程中增碎的原因是多方面的,归纳起来不外乎有几个方面,在本文中将会详尽阐述。选用适宜的大米加工工艺流程应根据稻谷的品质、粒形、含水量及其新鲜陈旧陈化程度等进行认真地思考和分析选用事宜的大米加工工艺。
Whole rice and broken rice have no difference from the chemical composition, but it is more different from the economic value and eating quality for whole rice and the broken rice. The production practice has shown that many aspects will bring up rice broken ratio during rice processing process, sums up to nothing more than a few aspects, this article will elaborate.
