摘要
以鳐鱼肝脏为材料,研究碱性蛋白酶提取鱼肝油的工艺条件,并以鱼肝油提取率为指标,进行正交优化,对最佳提取条件下的粗鱼肝油进行理化性质分析。结果表明,最佳提取条件为:起始pH 8,酶解温度45℃,酶解时间3.5 h,酶用量2.0%及液固比1∶1,该条件下的提取率达到86.46%,理化性质均达到SC/T 3502-2000标准粗鱼肝油的二级要求。可为鳐鱼肝脏的综合利用提供理论参考价值。
The cod liver oil was extracted from skate liver by alkaline protease, the extraction rate of cod liver oil taken as the index. The orthogonal optimization was carried out, analyzing on the physical and chemical properties of crude cod liver oil under the optimum extraction conditions. The results showed that the best extracting condition was that the enzymolysis time of 3.5 h at temperature of 45 ℃ and the initial pH 8, enzyme dosage of 2.0%, and the liquid-solid ratio 1 : 1, and the extraction rate of cod liver oil under this condition was 86.46%. All physical and chemical indicators reached secondary standard of fish oil of SC/T 3502-2000 standard. A theoretical reference value for the comprehensive utilization of the skate liver was provided.
