安培计法测定小麦粉损伤淀粉方法精密度的研究 被引量:1

摘要 安培计法是一种简单快速测定小麦粉中损伤淀粉含量的新方法。通过对11家实验室进行的验证试验,对方法的精密度进行了研究,分析得出该方法的重复性限和再现性限。结果表明,方法的两个特征参数中,小麦粉碘吸收率在90.2%~96.0%内,UCD值在10.7~26.1范围内,重复性和再现性标准差拟合程度较好。 Amperometic method is a simple and quick new method to determine the damaged starch con- tent in wheat flour. The repeatability limit and reproducibility limit of this method were obtained based on the verification test carried out in eleven laboratories, and researched the precision of the method. The re- sults showed that the standard deviation of repeatability and reproducibility fitted with each other when the two parameters, absorptivity of iodine in the range of 90.2%-96.0%, UCD value in the range of 10.7 - 26.1.
