摘要
扇贝柱脱壳历来是扇贝加工的技术难题。研究了海湾扇贝的贝柱脱壳最优方式及蒸汽式扇贝柱脱壳的机理,探究蒸汽喷射下扇贝柱的粘附力及脱壳效果、扇贝壳内温度随蒸汽喷射时间的变化规律,确定最佳蒸汽喷射时间的范围。结果表明,当蒸汽温度为120℃、喷射时间为5~10 s时,脱壳效果较好;不同直径范围的海湾扇贝壳内温度随喷射时间变化的规律差异明显,因此在进行海湾扇贝脱壳前,应根据其大小进行分级,以保证高效率和贝柱的高质量。
Shelling of scallop has always been a scallop processing technical problem. In the view of the bay scallop, shelling way of scallop and mechanism of scallop machinery-shelling by steam were studied. Under the steam jet, taking tests to explore the adhesive force, the effect of shelling on the scallop and the variation of scallop inner shell's temperature with the steam injection time, to determine the range of the best steam injection timing. The experiment results showed that when the steam temperature was 120℃, injection time was 5 - 10 s, the shelling was better; shell temperature of different diameter scallop had significant differences with variation of injection timing. So before the scallop shelling, it should he graded according to their size, in order to ensure high efficiency and high quality of shellfish column.
