食品安全风险评估——风险特征描述 被引量:3

摘要 作为食品安全风险评估的最后一个步骤,风险特征描述是通过整合并综合分析危害特征描述与暴露评估的信息,评估目标人群的潜在健康风险,为风险管理决策制定提供科学方面的建议。国际食品法典委员会(CAC)将风险特征描述定义为:在危害识别、危害特征描述和暴露评估的的基础上,对特定人群中发生已知的或潜在的健康损害效应的概率、严重程度以及评估过程中伴随的不确定性进行定性和(或)定量估计。
