摘要
以柠檬酸为脱钙剂,在磁力搅拌作用下进行鳙鱼鱼鳞的脱钙研究。先后采用单因素实验和正交试验法考察了固液比、柠檬酸质量分数、搅拌时间和搅拌速度等工艺参数对脱钙率的影响并进行了优化。结果表明:最佳工艺参数确定为固液比1∶20 g/mL、柠檬酸质量分数10%、搅拌时间60 min和搅拌速度900 r·min-1,在此条件下,脱钙率高达92.57%。正交试验的方差分析表明上述四因素对脱钙率的影响精度均为不显著,但通过极差分析和F i值比较均可发现四因素对脱钙率影响程度的相对大小为柠檬酸质量分数>固液比>搅拌时间>搅拌速度。
Study on decalcification of bighead fish scales using citric acid as decalcifying agent under magnetic stirring was carried out. The single factor experiment and orthogonal test were separately used to investigate the effects of solid-liquid ratio, citric acid mass fraction, stirring time and stirring speed on the decalcification rate and to optimize these process parameters. The results showed that the optimal parameters were determined to be: solid-liq- uid ratio of 1 : 20 g/mL, citric acid mass fraction of 10% , stirring time of 60 rain and stirring speed of 900 r ~ min-l,under such conditions the decalcification rate reached up to 92.57%. The variance analysis of orthogonal test proved that the impact accuracies of the four parameters on the decalcification rate were not significant, but through the poor analysis and Fi value comparison, it could be found that the relative sizes of the impacts of the four parameters on the decalcification rate were citric acid mass fraction 〉 solid-liquid ratio 〉 stirring time 〉 stirring speed.
