摘要
研究了在超声波作用下棕榈油结晶诱导时间、结晶速率、结晶形态、粒径分布、硬度及熔化特性的变化。结果表明:在超声时间为20、60 s,超声功率为95、270、475 W,结晶温度为30℃的条件下,超声波可以显著地缩短棕榈油结晶诱导时间并加快结晶速率;随着超声功率的增强,呈圆盘状生长的规则晶体逐渐消失,取而代之的是细小均匀的不规则晶体,平均粒径及分布范围明显缩小;此外,棕榈油的结晶硬度显著增大,但熔化焓没有显著差异。
The crystallization behavior of palm oil treated by ultrasonic was investigated. The results showed that under the conditions of ultrasonic time 20, 60 s, ultrasonic power 95,270,475 W and crystallization temperature 30 ℃, ultrasonic reduced the crystallization induction time significantly and accelerated the crystallization rate of palm oil. With the increase of ultrasonic power, fine, even and irregular crystal instead of disc - shaped regular crystal, and the average particle size and the distribution scope of irregular crystal narrowed significantly; the hardness of palm oil increased obviously but the melting enthalpy had no remarkable difference.
